Steps

  1. Preheat oven to 425°F (220°C).
  2. Wash and pierce each potato with a fork a few times. Place them directly on the oven rack and bake for 40-50 minutes, or until tender when pierced with a fork.
  3. While the potatoes are baking, prepare the filling. In a bowl, combine almond milk, salt, pepper, and garlic powder to taste.
  4. Once the potatoes are cooked, let them cool slightly for a few minutes. Then, carefully cut each potato in half lengthwise and scoop out the flesh, leaving a thin border around the skin.
  5. Place the empty potato skins back on the baking sheet and return to the oven for 7-10 minutes to crisp up.
  6. Meanwhile, mash the scooped potato flesh with the prepared almond milk mixture.
  7. Remove the potato skins from the oven and fill them evenly with the mashed potato mixture.
  8. Top with your desired toppings, such as crumbled vegan bacon, chives, and vegan cheddar cheese.
  9. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until heated through and the desired level of crispness is achieved.
  10. Remove the potatoes from the oven and drizzle with vegan ranch dressing.
  11. Top with additional chives if desired.
